Seaman's
bread Ingredients:
500 gm flour “00”, 200 gm caster sugar, 155
gm olive oil, 100 gm raisins, 50 gm pine nuts,
50 gm candied fruit, 1 egg, 1 teaspoon baking
powder, 1 lemon, 1 dl marsala wine, salt.
Soften
the raisin in warm water for 15 minutes, mix
together the flour, sugar, baking powder, 1
pinch of salt and the grated lemon peel. Add
the raisins, pine nuts and the candied fruit.
Mix again, make a well in the centre, pour 125
gm of oil, the marsala, the egg and the lemon
juice on it, work it energetically until you
obtain a homogeneous and smooth dough. If it
is too dry, add a little warm milk. Divide the
dough into small portions, put them on the oiled
baking sheet, cut a cross on the surface and
let it rise for ½ hour. Bake it in the oven
for about 45 minutes at 200° C. Serve it slightly
warm or cold. |
